If you are VERY skilled with cars and realize that this will be a totally custom job,I'd say go ahead..but there are probably extra support cross-members or something on the convertible to maintain structural integrity of the car,whereas by cutting the roof off of one you are comprimising the integrity so measures would have to be taken to fix this. probably lotsa other stuff too :)
