Temp Gauge freaking out

When I turn on the engine, the guage immediately jumps to the mid range ,after not long (30 sec to 1 min) it jumps all the way to hot (top of the scale) it then periodically goes to middle and then back again. It also jumps up and down about an 1/8 if an inch....what gives??
