Catalytic Converter

I had a high-flow cat, 2 1/4 midpipe and OEM muffler installed in my 84 GTS.  It sounds quiet and seems more powerful than stock, especially above 4,000 RPM.  The shop that did the work will do my downpipe next.

Should I go 2 1/4 or 2 1/2 on the downpipe?

They will also build a cat bypass tube for me.  It was noted by Steve that he would not 'recommend running a bypass tube on a 4-cylinder fulltime'.  Does this imply that it is OK to run a bypass tube on an 8-cylinder?  OR does this mean a catastrophic failure of some sort in the motor?(By OK I don't mean laws/regulations, as it is illegal to remove a catalytic converter except for off-road use, which I plan on doing as I autocross with the GTS).
